Welcome to Say Taco!

When we took over Sayulita in October of 2024, we weren’t sure what we had. Sure it had a good run for a couple years before Covid, but like a lot of restaurants, they never really recovered post-Covid. The concept was tired and it was time to wake the place up and figure out what we wanted to be.
So we did what we did at our other five restaurants in an attempt to figure it out. We threw stuff against the wall to see if it worked and screwed up a few things, somehow getting even worse before finally getting better. It’s quite the process, one we’ve somehow successfully executed several times before.
In the end, our concept evolved away from the original vision of Sayulita. Gone was the traditional Mexican fare and Latin music replaced by Tex Mex and Country with a focus on Tacos. We added a bar and instituted full service as opposed to prior counter service. We created a place where we hoped everyone would feel welcome.
And we think the transformation worked. Based on the increase in business and improved customer feedback, it appears you do as well. Thank you for your support and we hope you’ll say hello to Say Taco for years to come.
Sincerely,
Chris Wilson
